WHere is an easy interpretation of a beverage found on the seasonal cocktail list. Designed as a batch prepared mix which is packed with the tastes of the festive period, which makes it perfect for a holiday party. Save the extra cordial you can use for morning drinks, sweets, or to mix more rounds of bikinis.
The Bikini Cocktail
Serves 10 guests
To make the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Cocktail (yields 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Combine all the ingredients in a pan, bring to a light boil, mixing until the sugar dissolves. Next, take off the burner and leave to cool down fully. Transfer into a sealable bottle, seal keeping it in the refrigerator, it can be stored for around a month.
Preparing the Batch Mix: Mix the specified spirits and syrup into one sizeable container, leave to sit for one hour, then pass it through preferably using muslin, to ensure it's fully clarified.
To serve: Measure 85ml from the batch mix into your mixing glass packed with ice, and stir carefully for one minute until cold. Pour into an chilled martini glass or a similar vessel, top with some cranberries and finish with a quick spritz of mandarin oil over the top.
